Siu Man Ng was born in Hong Kong in 1960. He was enlisted to the Hong Kong Military Service Corps in 1980 and served for fourteen and a half years.
Ng first worked as a driver in the Royal Corps of Transport, where he was trained professionally for driving different vehicles. His responsibility was to transport soldiers’ family members and to cope with any need of transportation in the army. Meanwhile, he was also put in charge of a special task - pig breeding. It was for this purpose that Ng was offered to attend lessons at Kadoorie Farm and Botanic Garden. Since then pig-breeding business came to him as another façade of his job alongside his other duties in Royal Corps of Transport. After working for two years, he was transferred to the Royal Electrical and Mechanical Engineers, where he was given a chance to go abroad for further training, an opportunity in England at which he obtained the Vehicle Recovery 1st Class Tradesman. When he returned to Hong Kong he was not promoted despite his experience as the army had no position available to promote him to a higher rank. This prompted him to transfer to another department, the Hong Kong Provost Company, Royal Military Police where vacancies were available. There he was responsible for law and order issues within the military, where he remained until retirement. He left the army in 1995, and continued his career in the Disciplinary Services by serving in the Hong Kong Auxiliary Police.
